Green Velvet Cupcake Experiment…

I wanted to make cupcakes for Maggie’s class for tomorrow, and I found this great recipe for ‘green velvet’ cake (http://southinyourmouth.blogspot.com/2009/04/red-velvet-cake-err-green-velvet.html). Mine definitely didn’t turn out as fancy looking as hers, but they were fun to make!!  John calls them the ORNL cupcakes – they’re GLOWING!!

The NEON batter (I used every bit of green food coloring I had in the house to get enough that the recipe calls for, is that green or what?)

I tested one, I’m still ASTOUNDED at the neon green!!

(the cake tastes pretty good, though!)

Frosting – recipe here – basic buttercream.

I didn’t want to do creamcheese frosting – kids like plain sugar anyway!

I don’t have a pastry bag, so I made one! I’ve found this is a SUPER fast way to frost cupcakes.

My mother passed away in 2002, and I miss her every day. She left a legacy of love, support and undying service to others. Her Christmas cookies were the best, too. Here’s her recipe. Chill the dough before rolling out for best results. Frosted or not, they are delicious.

Here We Go! Sleep Deprived and a Bit Down

The blog has FINALLY come to fruition.  I’m determined to create this for me, and my friends to share our lives, musings, and creativity with the world.

To say the least, I’m sleep deprived.  My kids just can’t seem to ‘get’ the whole sleeping through the night thing, and my husband can’t let them cry for fear of them waking each other up.  We have to get past this stage or we’re going to lose it!  On top of this, my job is incredibly busy, with very big projects demanding my attention, a huge mountain of financial worries plague our life, and we are out in left field by ourselves most of the time.  I know these things will work themselves out with a plan and hard work, but in the midst of it all, it takes a toll somedays, and I wonder just how we’ll make it through.

We don’t have a choice, but to make it, though.  I’ve resolved to use my resources and find a way to get what I want out of my life.  I have so much to be thankful for; I am working to achieve something substantial for myself and my family.

I had no idea my life would turn out this way, but in the end, does it really matter?  It is what it is.  I will keep moving forward.
